Recipe for super-healthy protein pancakes
Hi everyone,
I have been feeling bad that I’ve yet to post a video for you. So I decided to share this really healthy recipe that Andrew and I here at myomytv.com enjoy almost every evening at home. It is really easy to make and I have provided step by step instructions and also nutritional information that I worked out.
This will make a serving for 2-3 people.
Ingredients
9 medium egg whites
1 tub of natural fat free cottage cheese 250 grams
2 teaspoons of cinnamon
2 teaspoons of fructose/unrefined sugar
1 cup of porridge oats
You will also need low calorie spray for cooking with and if you like some fruit to serve with. I have used an apple.
Method
Combine egg whites, cottage cheese, sugar, cinnamon and porridge oats in a bowl or large jug and blend until smooth.
Now use a small omelet frying pan and spray with a low calorie oil to stop mixture from sticking. On a medium heat pour in mixture until the bottom of the pan is completely covered.
Wait until small bubbles appear on top and then flip the pancake over and cook for a further 2 minutes. I would place the cooked pancake in a preheated oven on low to keep warm, while i cook the rest.
Once you have all the pancakes cooked (I usually get 5 good sized pancakes out of this mixture), simply top with peanut butter and a side serving of your favourite fruit, apple/banana goes really well.
I would normally have 2 of these pancakes as my last meal of the day, or sometimes for lunch. Andrew would have 3.
Now the nutritonal information. I’d like to highlight that this is as accurate as I could get it, so it is only a guide:

| Sugar | 2.2g |
| Fibre | 1g |
| Fat | 2.5g |
There you have it, a slow realising protein, a low glycemic carbohydrate with the essential fats that are in peanut butter. ( Perfect )

will these pancakes keep if I cook them and keep them in the fridge for use over a couple of days? thanks
Hi Michelle, You can keep the pancakes in the fridge and heat them in the microwave, oven or grill to “revive” them. They still taste just as nice.
Love the pancakes!!!!!….but everytime I try to get the info on the coconut heaven it will not pull up!!! Is the ant way you can re post it or e-mail it to me? Thank you so much for all the info and the vidoes….you have helped me so much!! Please don’t stop!
Hi Sheresa, Glad you like the pancakes, I’ve recently discovered that they are also really nice without the cinnamon, if you fancy it for a change. Sorry about the problems with coconut heaven. It loads ok for me. I’ve emailed you the full text. Hope you like it as much as the pancakes.

Funny, I was thinking about doing a new recipe a while back. Will get thinking about one. With the pancakes, I prefer them without cinnamon. Enjoy. Oh and I put coconut oil and a little honey on to them – which is super yummy!
Stupid question, but how do you make your porridge oat?
BTW, I am french canadian and never heard of this term, if it can help me look less innoncent
