Coconut Heaven – SuperLoaf!
Hi everyone,
I’ve been asked quite a lot about what I would recommend for healthy snacks. I’m a real “grazer” by nature so I value snacks above all else but, they have to be tasty! It’s difficult at times to choose a healthy option as “snack” implies a quick bite or something on the go so this can be tricky as it is too easy to pick unhealthy convenient foods.
So what would I advise? The same as everything, health doesn’t happen by accident so the key, is planning. I like to ensure that when I do my weekly shop that I include enough items specifically for snacks. Just be smart and have a variety of flavours, some healthy savory and some healthy sweet snacks so you have no excuse to reach for the crisps or chocolate (unless a couple of squares of dark choc of course
).
As part of my planning, I would sometimes bake this great Coconut Loaf. It is really tasty and really healthy.
Coconut is, in my opinion, nature’s unsung hero! It is one hell of a Superfood which, unfortunately has been subjected to some unfounded, misinformed negative press and politics which has prevented knowledge about it’s many benefits from circulating. Lately there has been loads of research and positive press to try and reverse the damage. I will be doing my part for coconut not only with this recipe, but by posting an article purely on the wonders of Coconut and, more specifically, Coconut Oil.
Anyway, back to the recipe.
Ingredients
- 3/4 cup Coconut Flour (sifted)
- 1/4 cup Wholegrain Flour
- 4 tbsps Coconut Oil (melted)
- 3 tbsps Coconut Cream
- 5-6 medium eggs
- 1/2 tsp Vanilla Essence
- 1/2 tsp Baking Powder
- 4 tbsps Honey
- 1/2 cup Raisins
- 1/2 cup Walnut pieces
- pinch of salt
Method
- Blend eggs, coconut oil, honey, vanilla, coconut cream and salt.
- In a separate bowl prepare coconut flour, wholegrain flour and baking powder, then gradually add to wet ingredients and blend into a smooth batter.
- Turn on blender and gradually add the raisins and walnuts until evenly distributed throughout mixture.
- Pour mixture into a greased loaf tin
- Place in a pre heated oven at 160-170 degrees and cook for 30 -40 mins or until cooked through.
- Leave to cool, slice and serve with coconut oil, honey or on its own. Enjoy.

I was thinking of making this. I have celiac and lactose intolerance (I am so lucky) and have been coconut flour quite a bit but we don’t have as many coconut products readily available in Canada. I am hoping to sub the coconut cream as I know we don’t have any around. Is it like a yogurt (I could do soy yogurt) or is better with reduced coconut milk? Obviously I will have to sub my GF flours for the self rising.

Hi Heather, Coconut milk is fine to use instead. I actually made it once or twice with the milk instead and it was nicer, more creamy rather than sweet. I love coconut

Yum! Me too it is my favorite food. Where do you get coconut cream? I have only seen the flour and oil here in stores, not cream. I have seen cream online like amazon.com but it seems a little pricey.

I just get the cream in the local health food shop. It’s also available in our grocery stores too like tesco and asda. Not sure where to get it online. It’s not usually that expensive. Where are you from?
I live in the united states. Oregon to be exact. Haven’t found any in stores here that’s just coconut cream. Only the stuff that’s full of sugar for piña coladas.
That’s a shame, but you can use coconut milk instead. I have done this before and it tastes just the same to be honest. It’s annoying when you can’t find the right ingredients. Although that usually happens here in Ireland more often LOL
True. I have seen it online though. I may just order some. I can’t have too much coconut!

Hi Norma, Welcome to the site, thanks for commenting. I don’t see anything wrong with the Paleo diet. It keep people away from processed crap and sugar, so that is only a good thing

Loving this loaf to cull my night time cravings but just had to try some little additions.
I’ve added 1/4 cup of chia seed and changed the wholemeal flour to almond meal. This can make it denser so I found you need to add a extra tablespoon of coconut milk, use 6 eggs and a 1 heaped tsp of bicarb to make it rise.
I’ve also played with differant fruits and it works well with apricots/cranberries and for a extra touch you can put almonds on top to give it that crunch.
