Chicken and Mixed Bean Tomato Stew

This recipe was inspired purely by hunger.  I had a few ingredients lying about so I threw them together and made this stew, that is actually very nice.  Plus it contains very little fat, tones of protein and fibre.

  • 1 medium onion or 1/2 a large (cubed)
  • 400g tin of mixed bean salad in water
  • 400g tinned tomatoes
  • 2 gloves of garlic (finely chopped)
  • 1/2 tsp basil

  1. Heat a small amount of oil in a large frying pan or wok
  2. Add garlic and cook until fragrant
  3. Now and chicken and cook until all the meat is white
  4. Add onion and cook for further few minutes
  5. Now stir in the mixed beans and continue to stir
  6. Lastly add tomatoes and basil and simmer for 5 minutes
  7. Serve on its own or with rice
