Chicken and Mixed Bean Tomato Stew
This recipe was inspired purely by hunger. I had a few ingredients lying about so I threw them together and made this stew, that is actually very nice. Plus it contains very little fat, tones of protein and fibre.

Ingredients
- 350g Chicken Breast (cut into small chunks)
- 1 medium onion or 1/2 a large (cubed)
- 400g tin of mixed bean salad in water
- 400g tinned tomatoes
- 2 gloves of garlic (finely chopped)
- 1/2 tsp basil


Method
- Heat a small amount of oil in a large frying pan or wok
- Add garlic and cook until fragrant
- Now and chicken and cook until all the meat is white
- Add onion and cook for further few minutes
- Now stir in the mixed beans and continue to stir
- Lastly add tomatoes and basil and simmer for 5 minutes
- Serve on its own or with rice
